Preheat oven to 375F. Grease a baking sheet; set aside. For pastry, in a medium saucepan, combine the water, milk, butter, salt, and nutmeg. Bring to boiling. Add flour all at once, stirring vigorously. Cook and stir until mixture forms a ball. Remove from heat. Cool for 5 minutes. Add two of the eggs, one at a time, beating well with a wooden spoon after each addition until smooth. Spoon batter into a pastry bag fitted with a round tip with a 1/2-inch opening.&lt;br /&gt;&lt;br /&gt;2. I'm still continuing on my weight loss path although with a little less enthusiasm as I have been incredibly busy for the last couple of months.  Its hard to find time to eat right when you're stressing about work or busy coughing up a long.  Stupid pollen!  However, my total weight loss is up to 25 lbs!  Still got a long way to go, but I'm getting back to Curves tonight after a two week absence and I vow to start counting my points again this week.&lt;br /&gt;&lt;br /&gt;A few things that I am super excited about that are coming up over the next few weeks are the opening of the Sex and the City movie and my mom's 50th birthday party.  Allison's coming to town on the night SATC opens so we can see it together.  I'm hoping to find a great low-cal recipe for Cosmos and when I do, I'll post it.  I've already found some great SATC themed drinks, but they were all major calorie splurges.  Hungry Girl probably has some options.  Just gotta make sure my shaker top is nice and tight so I can sneak my cocktail into the theater!&lt;br /&gt;&lt;br /&gt;As far as my mom's birthday party goes, the diet is out the window!  I am planning for other people of course.  :-D  She wants a casual backyard afternoon BBQ.  For like 50 people!!!  We're looking at getting fruit, veggies, and fried chicken trays from Publix.  Kaki is ordering oysters to serve bbq'ed and raw.  Those will be yummy!  My mom has found a great looking recipe for salsa.  We'll probably do a cheeseball and crackers.  Now I thought maybe we should just stick to finger foods, but Mom said she'd like to make it more of a meal and do bbq, potato salad, and slaw like stuff. &lt;br /&gt;&lt;br /&gt;Then of course there will be cake!  That's what I'm in charge of.  I'm still debating whether to order one of make it myself.  I have this vision of a simple two-tiered cake with a big shiny 50 on top.  I tried a practice cake to see if I even had close to the skills to make a two-tiered cake last night.  I'm afraid I don't.  Kaki thinks that that I could do it, but I'm worried that I'll screw it up in the end and I'll spend the whole day of the party working on it and not be able to help with the other stuff.  I guess I have about a little while to decide.  I just don't want her to end up with a boring sheet cake from Bilo. Heat to a boil.  Remove from heat and immediately add the jello.  Stir until dissolved.  set the pan aside and let the mixture cool to room temperature.  Place strawberries in bottom of a deep dish pie plate.  Pour cooled pudding mixture over the strawberries.  Refrigerate until chilled. Each&lt;br /&gt;Points: 2.5&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;INGREDIENTS&lt;/span&gt;&lt;br /&gt;1 box SF orange jello&lt;br /&gt;1 box SF white chocolate pudding&lt;br /&gt;1 can mandarin oranges&lt;br /&gt;1 8 oz tub fat free cool whip&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;DIRECTIONS&lt;/span&gt;&lt;br /&gt;Mix jello with 1 c. boiling water. It was really good but kind of messy. I think I may make a version of this with the bog cake recipe using white cake mix, applesauce, and mandarin oranges. Then I'll frost it with this pistachio frosting. Yum Yum!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;INGREDIENTS&lt;/span&gt;&lt;br /&gt;CAKE&lt;br /&gt;&lt;br /&gt;18 1/4 ounces white cake mix&lt;br /&gt;3 egg whites&lt;br /&gt;2 1/2 cups diet 7-Up&lt;br /&gt;&lt;br /&gt;FROSTING&lt;br /&gt;1(1ounce)package sugar-free pistachio instant pudding&lt;br /&gt;8 ounces fat-free cool whip(small)&lt;br /&gt;1 cup diet 7-Up&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;DIRECTIONS&lt;/span&gt;&lt;br /&gt;Mix all ingredients together. Spray 13 x 9 pan. Bake at 350 degrees for 30 - 35 minutes. Test cake top by lightly touching the center which should feel slightly firm and will slightly spring back to the touch. (Cool cake completely before frosting.). Mix together frosting ingredients and spread over cake. Can't wait to try it!&lt;br /&gt;&lt;br /&gt;Points : 4&lt;br /&gt;Servings : 2 huge servings !!Yay!!&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;INGREDIENTS:&lt;/span&gt;&lt;br /&gt; 1 medium butternut squash (about 2 pounds -- large enough to yield 20 ounces uncooked flesh) 1 container Boca Meatless Chili (or 9.5 oz. of another low-fat veggie chili**)&lt;br /&gt;1/2 cup shredded fat-free cheddar cheese&lt;br /&gt;1/8 tsp. kosher (or regular) salt&lt;br /&gt;1/8 tsp. cayenne pepper&lt;br /&gt;Optional Toppings: fat-free sour cream, chopped scallions&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;DIRECTIONS:&lt;/span&gt;&lt;br /&gt;Preheat oven to 425 degrees.&lt;br /&gt;Use a sharp knife to remove the ends of the squash. Cut squash in half widthwise (making it easier to manage) and then peel squash halves using a vegetable peeler or a knife. Cut squash in half lengthwise, and then scoop out all the seeds. Next, cut squash into french fry shapes (for best results, try to keep them even in size).&lt;br /&gt;Using a paper towel, pat squash pieces firmly to absorb any excess moisture.&lt;br /&gt;Place squash in a bowl, add a light mist of nonstick spray, and sprinkle with salt and cayenne pepper. Toss squash to evenly distribute salt and pepper, and then transfer to a large baking pan sprayed with nonstick spray.&lt;br /&gt;Use 2 pans if needed. Squash pieces should lie flat in the pan.&lt;br /&gt;Place pan(s) in the oven and bake for 40 minutes or so (longer for thick-cut fries, shorter for skinnier fries), flipping halfway through baking. Fries are done when they are starting to brown on the edges and get crispy.&lt;br /&gt;Leaving the oven on, transfer fries to a large oven-safe plate.&lt;br /&gt;Prepare the chili as directed on the package, and then pour it over the fries.&lt;br /&gt;Sprinkle with cheese, and place the plate in the oven for 5 minutes, or until the cheese has melted. Carefully remove from the oven and, if you like, top with sour cream and scallions. Coat a 9-inch square baking dish with cooking spray.&lt;br /&gt;Peel and thinly slice potatoes; layer in prepared baking dish. Bake potatoes until slightly crisp, about 10 minutes; remove baking dish from oven and set aside.&lt;br /&gt;While potatoes are baking, coat a large nonstick skillet with cooking spray and warm over medium-high heat; add garlic, onion, green pepper and mushrooms. I still love it.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;POINTS® Value: 6&lt;br /&gt;Servings: 6&lt;br /&gt;&lt;br /&gt;This Mexican lasagna will last up to five days in the refrigerator.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;INGREDIENTS&lt;/span&gt;&lt;br /&gt;1 sprays olive oil cooking spray&lt;br /&gt;2 pound uncooked boneless, skinless chicken breast&lt;br /&gt;30 oz canned black beans, rinsed and drained&lt;br /&gt;3 cup fat-free sour cream&lt;br /&gt;2 cup shredded reduced-fat Mexican-style cheese, divided&lt;br /&gt;8 oz chopped green chilies, two 4-oz cans&lt;br /&gt;2 tsp ground cumin&lt;br /&gt;1/2 tsp black pepper&lt;br /&gt;12 medium corn tortilla(s), cut into 2-inch strips&lt;br /&gt;1 cup salsa, mild, medium or hot&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;INSTRUCTIONS&lt;/span&gt;&lt;br /&gt;Preheat oven to 350ºF. Coat a lasagna pan with cooking spray.&lt;br /&gt;Place chicken in medium saucepan and fill with enough cold water just to cover chicken. Set pan over high heat and bring to a boil. Reduce heat to medium and simmer until chicken is cooked through, about 10 to 15 minutes; drain. When chicken is cool enough to handle, cut into 1-inch pieces.&lt;br /&gt;Transfer chicken to a large bowl and add beans, sour cream, 1 cup of shredded cheese, chilies, cumin, and pepper; mix well and set aside.&lt;br /&gt;Arrange half of tortillas in bottom of prepared lasagna pan, overlapping pieces to cover surface. Top tortillas with half of chicken mixture, layer with remaining tortillas and then top with remaining chicken mixture. Hope it tastes good.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;INGREDIENTS&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;/span&gt;&lt;br /&gt;1 tablespoon butter&lt;br /&gt;2 cups thinly sliced sweet onions&lt;br /&gt;1/4 cup balsamic vinegar&lt;br /&gt;1/2 cup fresh or frozen cranberries (thawed), coarsely chopped&lt;br /&gt;1 tablespoon sugar&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1/2 teaspoon grated orange rind&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;DIRECTIONS&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;/span&gt;&lt;br /&gt;1. Melt butter in a large skillet over medium heat; add onions, and sauté 15 to 18 minutes or until golden and tender. Stir in vinegar and remaining ingredients; cook, stirring occasionally, 2 to 4 minutes or until liquid is reduced to about 2 Tbsp.&lt;br /&gt;&lt;br /&gt;Caramelized Onion-Cranberry-Cream Cheese Bites: Spread 16 whole grain crackers each with 1 1/2 tsp. 1/3-less-fat cream cheese; top each with 1 Tbsp. Sounds good and easy enough for me!  I probably won't make the gravy and we'll serve it with mint jelly instead.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;INGREDIENTS&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;/span&gt;&lt;br /&gt;1/2 cup olive oil&lt;br /&gt;10 cloves garlic&lt;br /&gt;Coarse salt and freshly ground pepper&lt;br /&gt;1 leg of lamb, boned, rolled and tied (about 7 pounds)&lt;br /&gt;1 cup dry red wine&lt;br /&gt;1 cup homemade chicken stock, or canned low-sodium chicken stock&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;DIRECTIONS&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Preheat oven to 400 degrees.&lt;br /&gt;&lt;br /&gt;In a blender, combine the oil, garlic, 1 tablespoon salt, and 1 teaspoon pepper. Blend until smooth and emulsified, scraping down the sides as needed.&lt;br /&gt;&lt;br /&gt;Place the lamb, fat side up, on a rack set in a roasting pan; spread garlic paste all over lamb. Roast in oven until a meat thermometer inserted into the thickest part of the meat registers 135 degrees.for medium rare, about 2 hours.&lt;br /&gt;&lt;br /&gt;Transfer lamb to a platter, and discard string; keep warm while you make the pan sauce.&lt;br /&gt;&lt;br /&gt;Pour wine or 1 cup water into the roasting pan in which the lamb was cooked. Place over medium heat, and scrape up browned bits from bottom of pan. Add stock and 1/2 teaspoon salt, and bring to a simmer. Cook, stirring, until liquid has reduced to 1 1/2 cups, about 10 minutes. Skim fat from surface, as needed.&lt;br /&gt;&lt;br /&gt;Slice lamb just before serving. Pour into crust. Bake 15 minutes.&lt;br /&gt;&lt;br /&gt;Reduce oven temperature to 350°F and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. I think he'll really love this pie too!&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;INGREDIENTS&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;/span&gt;&lt;br /&gt;1 chocolate crumb crust&lt;br /&gt;1 1/4 cups milk&lt;br /&gt;1 package chocolate pudding and pie filling mix (not instant)&lt;br /&gt;1 cup semisweet chocolate chips&lt;br /&gt;4 oz. cream cheeze, softened&lt;br /&gt;1/2 cup powdered sugar&lt;br /&gt;1/4 tsp. peppermint extract&lt;br /&gt;3-5 drops green food color (optional)&lt;br /&gt;2 cups frozen whipped topping (thawed)&lt;br /&gt;2 Andes mints, unwrapped&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;DIRECTIONS&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;/span&gt;&lt;br /&gt;Prepare and bake pie crust. Cool completely.&lt;br /&gt;&lt;br /&gt;Stir together milk and pudding mix; cook as directed on package. Continue cooking on low heat while adding chocolate chips, stirring until melted. Set aside.&lt;br /&gt;&lt;br /&gt;In medium bowl, beat cream cheese, powdered sugar, peppermint extract and 1 to 2 drops of green food colouring until smooth. Gently fold in 1 cup of thewhipped topping.&lt;br /&gt;&lt;br /&gt;Spread cream cheese mixture into pie crust. Top with chocolate mixture.  Refrigerate at LEAST 2 hours until set.&lt;br /&gt;&lt;br /&gt;To colour remaining 1 cup whipped topping, in small bowl stir together whipped topping and 2 drops of foodcolour.  Garnish pie with whipped topping.  Chop mints and sprinkle over whippedtopping. Of course it will actually be Dec. 29th dinner because of scheduling issues, but we are going to pretend that it is still Xmas anyway.&lt;br /&gt;&lt;br /&gt;The menu includes this creamed onion recipe from my mom.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;INGREDIENTS&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;/span&gt;&lt;br /&gt;24 small white onions&lt;br /&gt;1 tablespoon butter&lt;br /&gt;White wine&lt;br /&gt;Bay leaf&lt;br /&gt;Pinch thyme&lt;br /&gt;Dash salt&lt;br /&gt;1 cup heavy cream&lt;br /&gt;Dash freshly ground white pepper&lt;br /&gt;2 tablespoons butter&lt;br /&gt;1 1/2 cup freshly chopped parsley&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;DIRECTIONS&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Arrange onions in wide pan in single layer if possible. Add 1 tablespoon butter and enough white wine to come halfway up onions. Add bay leaf, thyme and salt. Simmer, covered, about 25 minutes or until fork-tender. If liquid has not evaporated, raise heat and boil off. Add cream and boil slightly to thicken. Add pepper, 2 tablespoons butter and chopped parsley; combine with onions and transfer to serving platter. It's really basic which is exactly how I like my green bean casserole to be.  I think I may skip the soy sauce and add the cheese when I make it though.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;INGREDIENTS&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;/span&gt;&lt;br /&gt;1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)&lt;br /&gt;1/2 cup milk&lt;br /&gt;1 tsp. soy sauce&lt;br /&gt;Dash ground black pepper&lt;br /&gt;4 cups cooked cut green beans&lt;br /&gt;1 1/3 cups French's® French Fried Onions&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;DIRECTIONS&lt;/span&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;/span&gt;&lt;br /&gt;MIX soup, milk, soy, black pepper, beans and 2/3 cup onions in 1 1/2-qt. casserole.&lt;br /&gt;BAKE at 350°F. for 25 min. or until hot.&lt;br /&gt;STIR . Sprinkle with remaining onions. Bake 5 min.&lt;br /&gt;&lt;br /&gt;TIP: Use 1 bag (16 to 20 oz.) frozen green beans, 2 pkg. (9 oz. each) frozen green beans, 2 cans (about 16 oz. each) green beans or about 1 1/2 lb. fresh green beans for this recipe.&lt;br /&gt;&lt;br /&gt;For a change of pace, substitute 4 cups cooked broccoli flowerets for the green beans.&lt;br /&gt;&lt;br /&gt;For a creative twist, stir in 1/2 cup shredded Cheddar cheese with soup. Put in casserole and add remainingingredients.
